This top chef position directs two gardeners who grow 90% of your Fruit & Veg for the hotel kitchen and the Fish & Shellfish is the freshest in Ireland. We need a real “foodie” who loves cooking modern “Bib Gourmand” standard food and using great local suppliers. This is a lovely place to work with lots of freedom to create menus across the food outlets on the estate.

Key skills needed

  • Be a Head or Sous chef presently
  • A real love and passion for food & creative cooking
  • Ability to manage a team of 12 chefs
  • Overview of three food outlets
  • Responsible for achieving budget GP%
  • Plan ahead for planting gardens
  • Good communication skills
