Job Title: Sous Chef

This busy four star in Dublin city centre prides themselves on the warm, welcoming environment they offer both guests and employees. They now require a Sous Chef with strong hotel experience to help ensure smooth kitchen operations and a quality food offering for all their guests. This role would suit either an experienced Sous Chef or a highly experienced Chef de Partie looking to advance in their career.

Key responsibilities include:

  • Assist in ensuring all kitchen staff are able to carry out their duties to a four star standard
  • Ensure all guests queries are handled promptly and efficiently
  • Ensure all guest requests are met or suitable alternatives offered
  • Assist in maximizing revenues, cost percentages and menu structure through efficient management
  • Assist Head Chef in updating all menus consistently and seasonally according to standard
  • Assist Head Chef by ensuring product satisfaction standards and consistency are checked daily 
  • Assist Head Chef by ensuring all kitchen staff make sure product is to standards prior to presentation to guests 
  • Assist in updating hotel recipes and menu specs along with menu changes
  • Ensure efficient service to guests at all times
  • Ensure that staff have adequate supply of working tools and utensils to carry out their jobs to meet / exceed all standards

The ideal candidate will have two years’ experience in a similar position within a four star property. Must have Level 3 HACCP qualifications. Further candidate attributes include:

  • Understanding and knowledge of compiling wage forecasts, rosters, monthly stock control & budgeting, cost control management
  • Fully competency in menu engineering and design
  • Ability to create an environment that promotes employee morale and encourages the team to have pride and commitment in their work
  • Excellent communication, organisational and leadership skills
  • Strong knowledge and experience of implementing HACCP legislation
  • Fluency in both written and spoken English required
